मास्टर शेफ - My View

आमच्या घरात मोठी आणि छोटी मंडळी  food-lovers असल्यामुळे मास्टर - शेफ series अनेकदा पाहिली जाते. आणि  दर वेळी मला प्रकर्षाने जाणवतं की 'This is not fair'

एखाद्या पाककृतीची चव तसेच रंग-रूप आवडणं किंवा न आवडणं हा अतिशय वैयक्तिक चॉईस आहे हे माझं ठाम मत आहे .
कितीतरी उदाहरणं देता येतील की  शिजवलेला पदार्थ त्यातील घटकांमुळे , किंवा बनवण्याच्या पद्धतीमुळे , एखाद्याला फार आवडून जातो आणि एखाद्याला नाक मुरडायला भाग  पाडतो . 

माझ्या बहुतेक पदार्थांमध्ये सुक्या किंवा ओल्या खोबऱ्याचा सढळ हाताने वापर असतो , पण कित्येक परिचित बंगाली /ओडिसी मंडळींना हे खोबऱ्याचं preparation अजिबात आवडत नाही .
माझे आई -बाबा केवळ दही -दूध -ताक यावर दिवस च्या दिवस काढू शकतील आणि मला दुग्धजन्य पदार्थ जरा पण आवडत नाहीत .
कुरकुरीत तळलेली  मांदेली खुप आवडते पण कलेजी फ्राय ला हात पण लावत नाही .

कुणाकडे भाजीत १ मिरची पण खूप होते तर कुणाकडे भाजीत मूठभर मिरच्या असल्या शिवाय ती भाजी खाल्ल्यासारखी वाटत नाही.
अजुन टिपिकल उदाहरण द्यायचं तर ice -cream च देईन . जेव्हा जेव्हा Natural च्या दुकानात जातो , तेव्हा तेव्हा 'व्यक्ती तितक्या प्रकृती ' हे अगदी ठळक पणे जाणवतं. 
मुलाचं ठराविक चॉकलेट फ्लेवर , आम्हा दोघांचं   seasonal fruit फ्लेवर , बाकी सर्वांचं टेंडर कोकोनट किंवा सिताफळ.

फक्त चवच नाही तर feel /  texture  च्या बाबतीत पण आवडी -निवडी भिन्न असतात .
साधा भात , पण एकाच घरात एकाला अगदी मऊ शिजलेला आवडतो तर दुसऱ्याला शीत आणि शीत मोकळा असलेला आवडतो .
माझा मुलगा रश्यामधलं चिकन खात नाही पण कबाब किंवा बिर्याणी मधलं चिकन मनापासून खातो.
कुणाला डोसा पापडासारखा कुरकुरीत आवडतो तर कुणाला मऊसूत आवडतो .
कुणाला भात सुकाच खायला आवडतो तर कुणाला भातावर दुप्पट प्रमाणात डाळ -रस्सा लागतो तर कुणाला अगदी बेतास बेत प्रमाणात .
अंड - कुणाला उकडून आवडतं तर कुणाला half फ्राय , कुणाला मसाला ऑम्लेट तर कुणाला scrambled .

तात्पर्य काय तर हेच की पदार्थांची चव आणि सादरीकरण ही अगदी अगदी वैयक्तिक बाब आहे , आणि एकाला तो पदार्थ भावला तर तो best झालाय आणि नाही आवडला तर बेकार झालाय - हे ठरवणं तितकंसं बरोबर वाटत नाही.
मान्य आहे की काही पाककृतींची  standard procedure आणि ठराविक ingredients असतात , पण शेवटी  टेस्ट buds प्रत्येकाचे वेगळे असतात ना

मला जर कोणी पाककला स्पर्धेची परीक्षक म्हणून बोलावलं तर मी ठरवूच शकणार नाही की कोणाची डीश बेस्ट झालीय (म्हणजे अगदीच एखादी गंडली असेल तर गोष्ट वेगळी )
एकतर मला बनवायचे नाहीयेत ते complex  पदार्थ आणि वरतून ३-४ लोक मेहनत  करून मला खिलवतायत म्हणजे सोनेपे सुहागा
अश्या वेळी , समोर आलेल्या पदार्थावर ताव मारायचं सोडून त्याला critique करायचं म्हणजे महाकठीण

असो .. ज्यांना वेगवेगळ्या पाककृती चाखायला , बघायला आणि करून पाहायला आवडतात त्यांना मास्टर शेफ नक्कीच आवडत असेल (मला पण आवडेल पण फक्त तो परीक्षेचा  भाग नसेल तर  :) )

Revolution of app based taxis

Came back from Bengaluru couple of days back and while way back home, my thoughts wondered around how convenient and ubiquitous it has become for getting around in Mumbai with Ola/Uber.

Just a few years back, we used to be literally 'handicapped' due to various reasons related to getting a taxi.
My childhood days were spent in south of Mumbai, so auto-rickshaw appeared in life quite late.
Family travels always used to be in a taxi. There would be few spots where the taxis would wait, else simplest way of getting a taxi was to just wave your hand at passing by.
When moved to suburbs, auto rickshaws became defacto for every day commute.
Later I moved to Navi Mumbai and realized that rickshaw is not going to help me easily while commuting between office in Mumbai and home. As Mumbai and Navi Mumbai are different 'territories' for rickshaws and like inter-border rules between 2 countries, rickshaws from either side will not cross their laksman-rekhas.
But at the same time, catching taxi for daily commute was still a high fare affair.
So to avoid big holes in the pocket, we used to do break journey of rickshaw.
However after few months, I started getting backache and breathing problems caused by pollution due to frequent rickshaw travels.

Around the same time, somehow Ola entered in my phone and eventually daily life.
Even after having app handy, had not used it for quite a few months, just on the account of unawareness or may be lack of business case to use it.
Then my travel pattern changed again and had to travel to a place where getting a rickshaw was a daily war.
Not just the limited availability but also illogical fare rules defined by the rickshaw-walas on their own.
Then for the first time, I started experimenting Ola and then eventually Uber.
Slowly got the knack of using it fluently incl variations like micro/mini and even shared.
And in no time, these taxis really blessed me and many more like me who do not wish/want/afraid/bored to drive their own vehicles. They have truly enables us to be absolutely independent on travel front.
Taxis certainly make a big hole in the pocket, but when time is of more essence, we are bound to take these services rather than choosing for bus/train.
Commuting to and fro airport/train terminals has become so convenient, no need to bother anyone to drop / pick up or to remember to book Meru/Tabcab in advance.
No worry of not getting a taxi after stepping out of house.
No worry of going to unknown or less familiar places and of getting mis-routed.
With the facility of linking these apps to e-wallets, no worry of even carrying cash and chhutte paise.
No worry of waiting on road for spotting taxi or required bus or empty rickshaw.
And not just in Mumbai, in fact these taxis help the most outside Mumbai in other cities, where there are high chances of getting ripped by local taxi/rickshaw fares.
Ofcourse, the picture is not always so rosy. Got some frustrating experiences as well especially with shared or pool types, very high fares during peak times etc.
But still looking at enormous advantages, few small huddles can certainly be discounted.

In a short while, Ola/Uber have become my best travel buddies and hope they remain good for me as well as for all their happy customers in long run.

International Women's Day (IWD)

It is first week of March and IWD is already in the air.
Every year, and like every previous year, my organization will enthusiastically flash flyers, emails and stuff like that to make sure all souls are aware that 8th March as international women's day (IWD).
HR will arrange few exclusive sessions for women employees like – health camps, financial advise, lecture on time management and for work-life balance.
Most of newspaper ads will be changed to accommodate offers  on products ranging from houses, jewellery, household things etc.
Now in the era of whatsapp and facebook, since midnight of 7th march, all groups and walls will be over-flooded with poems, stories, posts, shayari emphasizing on how it is great being a woman and how the world respects n admires the fairer sex.
In schools, there would be many programs, in which few smart girls and teachers will talk on great women like Indira Gandhi, Savitribai Phule, Rani Laxmibai to newest Malala Y.
You will get at least 10 diff SMSs from brand stores, saloons, spas about offering discounts on the ‘special’ occasion of IWD.

On the D day, In office suddenly all your colleagues notice you as different specie and make an attempt to wish you, like they would have wished ‘happy Diwali or happy new year’ to everyone.
Unmistakenly, few of your colleagues and male friends  will ask you, ‘so whats special today? Or what’s the plan for today’

Special!? Plan!?

Is there supposed to be any special happening in my life today? How IWD is supposed to alter my routine day that revolves around home-office-kid? Am I suppose to do any of daily chores differently because it is IWD? Am I suppose to do anything in a different way compared to other 364 days in the year? Am I supposed to get 'ANY' special treatment for that matter?
And why should I get it BTW?
I am a woman, but am I not as human as men around me? If women are special then the men are also equally special, isn’t it? then why there is a need of dedicated day?

The world now takes pride in making big out of each and every small diversion that happens in our lives.
How is IWD serving to society? It gives a day to make it count in the year for those who count. 
An occasion to promote the business by offering discounts, an occasion to peak up sales numbers by promoting offers , an occasion to fill up the airtime on various channels with interviews of successful women, an occasion to another tick-mark in the list of events to be celebrated in the year, to give reason to talk about gender diversity for next 10 days?

It is worth introspecting, do we really need this day?

Rather than emphasizing on womanhood, Would it be more appropriate to set up the example for new generation about having more inclusive society?
To cultivate ‘we all are human first’ and  ensure to have their life gets developed based on cohesion. Would it be more worth to ensure that there is no such term itself as 'gender discrimination' and 'gender diversity'?

If we are able to do it right from our own home n surrounding, and nurture the new generation towards cohesive world, we certainly won't need the glorified and 'exclusive' IWD to celebrate the feminism.

संगम

कधी पाहिला नाहीये मी नदी आणि सागराचा संगम, पण जेव्हा पाहीन तेव्हा काही मनातले प्रश्न विचारीन नदीला ,

- कसं जमतं ग तुला असं झोकून देणं ?
- भेटतेस  तू समुद्राला आणि संपतं  तुझं स्वतंत्र अस्तित्व . त्या क्षणापर्यंत तुला स्वतःच नाव असतं , तुझ्या पाण्याला तुझी अशी एक चव असते . कसं जमवतेस तू असं 'मी ' पण संपवायला ?
- वाटते का ग कधी भिती तुला सागराची , त्याच्या रौद्रावताराची?  खवळलेला असतो जेव्हा तो, त्या वेळी काय करतेस तू? आवरतेस स्वतःला की तूही जोमाने सामावतेस त्यात?
- माहित असतं ना तुला कि तुला त्याच्या खाऱ्या पाण्यात मिसळून जायचंय ? की तुला असते आशा , कदाचित तुझ्या गोडव्याने कमी होईल खारटपणा ?
- गावा गावातून , दरी खोऱ्यातून  वाहतेस तू. वेगवेगळी रूपं तुझी , कधी अथांग प्रवाह तर कधी अवखळ धारा . काय रूप असतं तुझं त्या संगम क्षणी ? आतुरलेली नवयौवना की संसार त्यागलेली शांत समाधानी साध्वी ?
- येतात का कधी अश्रू तुझ्या डोळ्यांत , आठवून आपलं उगमस्थान - मागे राहिलेलं आणि आता कायमचं दुरावलेलं ?
- माहित असतं तुला की तुझ्यासारख्याच अनेक जणी सामावणार आहेत त्या सागरात , आणि तुझा एकटीचा नाहीये तो ?
- मन भांबावत नाही तुझं की कुठे नेईल हा संगम तुला ? की असते खात्री तुला त्याच्या अथांग आवाक्याची ?
- कधी विचारतेस का तू मजेत , वर्षानुवर्ष मी माझा गोडवा ओततेय तुझ्यात , हो की तुही गोड एकदा तरी माझ्यासारखा ?
- उठतं का मनी काहूर तुझ्या कधी , 'नको येऊस ' म्हणाला कधी तर काय करायचं ? की भरवसा असतो तुला मनापासून तो असं कधीच म्हणणार नाही याचा ?
- ठाऊक असतं तुला की एकदा का त्याच्या ओढीने प्रवासाला निघालीस की मार्ग नाही परतीचा ?
- कसं जमतं तुला सतत वाहत राहणं , हे माहित असूनही की अखेर त्याच्या खाऱ्या पसाऱ्यात लुप्त व्हायचंय पण तरीही त्या संगम क्षणापर्यंत स्वतः गोडंच राहायचं ?

काही सहज लक्षात आलेली  गिरगावातली अजब-गजब  eating joints नावं -

आमच्या गिरगावात खाद्य भ्रमंती साठी भरपूर ठिकाणं होती  आणि अजूनही आहेत . तेव्हा ही  सगळी दुकानं  त्यांच्या shortform नावांनी ओळखली जायची , पण पूर्ण नावं खरंच गमतीशीर होती .
बहुतांशी दुकानांची नाव त्यांच्या मालक/चालक मंडळींच्यां नाव /आडनावा नुसार असायची.   पण नावामागे  त्यांनी लावलेले extensions एकदम innovative  होते .

- गोविंदाश्रम  - काय वाटतं नाव वाचून?  भजन प्रवचन चाललंय असं वाटतं ना? पण हे नाव होत एका मस्त छोट्याश्या हॉटेल च . माझ्या आयुष्यातलं पाहिलं बर्गर मी इथे खाल्लंय . मिसळ उसळ बटाटावडा  खाण्यासाठी एक cool जागा  .
- पणशीकर 'आहार गृह' - फराळी मिसळ आणि इतर फराळी पदार्थांसाठी फेमस. तसेच मिठाई , दूधी वडी , आंबा वडी पण फेमस।
- प्रकाश  'दुग्ध मंदीर ' - V .P  रोड वर ह्यांची २ दुकान होती. आंग्रे वाडीच्या नाक्यावर असलेलं हे अगदी छोटंसं दुकान . इथला साबुदाणा वडा  माझ्यासाठी baseline आहे , दुसरीकडचा वडा प्रकाश पेक्षा किती टक्क्यांनी कमी आहे हीच तुलना . आणि त्यांचा पियुष  ... उफ्फ , बेस्ट बेस्ट बेस्ट !!!
- विनय 'हेल्थ होम '  - नंबर १ मिसळ,  आणि अनेक खास मराठी dishes. माझ्या classmate आशीष च्या मामांचं हे हॉटेल .
- छत्रे 'कोल्हापुरी चिवडा ' - मंगल वाडी समोर असणारं एक मिठाई  आणि उपहार गृह .  नावात चिवडा असला तरी actually मी इकडचा चिवडा कधीच नाही खाल्ला. पण डाळिंबी उसळ , मिसळ , कोथिंबीर वडी  एकदम मस्त .
'कुटुंब सखी ' - नावानुसार हे केंद्र स्त्रिया चालवायच्या . जपानी बागेत (नंतर स. का. पाटील  उद्यान ) मध्ये हे कॅन्टीन सारखं होत . बटाटा वडा , पोहे झकास आणि गरमा गरम मिळायचे.
- क्षुधा शांती भवन  - name says it all. घरगुती खाणावळी सारखं जेवण मिळण्याचं ठाकूरद्वार जवळच ठिकाण.
- अनंताश्रम  -  नाव आश्रम असलं तरी हे नाव होत खोताच्या वाडीतली ,अप्रतिम मासे आणि मटण मिळणाऱ्या ठिकाणाचं .  fresh  मासे आणि अतिशय अप्रतिम चवीची fish curry हि इकडची खासियत . मला वाटतं आता हे बंद झालंय .
- माने 'कोल्डड्रिंक हाऊस ' - बोरभाट लेन च्या नाक्यावर होत, इथे फक्त थंड पेय मिळायची . नंतर चहा पण मिळत होता बहुतेक.  जिंजर लेमन , लिंबू सोडा , शिकंजी सरबत आणि bottled कोल्ड-ड्रिंक मिळणारं दुकान .
- 'दरयुश' बेकरी  - सेंट्रल  सिनेमा समोर. दरयुश हे मालकाचं नाव होत का हे माहित नाही पण इथले केक , biscuits खूप छान असायची .
- राजा 'रिफ्रेशमेंट ' - मॅजेस्टिक सिनेमा जवळ असणारं ऑल-इन-वन हॉटेल जिथे मिसळ, वड्यासोबत डोसा, इडली पण छान मिळायचे

हि काही सहज म्हणून आठवलेली नाव आणि ठिकाणं . अजूनही कित्येक अशी नाव आहेत आणि जागा पण . त्यांच्याविषयी पुन्हा केव्हातरी .

गुण गाईन आवडी - पु.ल. देशपांडे

गुण गाईन आवडी

गेल्या आठवड्यात लायब्ररी मधे हे पुस्तक नजरेस पडलं .
लेखकाचे नाव 'पु.ल. देशपांडे '. मागच्या पानावर पुलंचा फोटो होता पान भरून .
म्हटलं अरे कधिच कसं नाही वाचनात आलं आधी ?

पुस्तक घेऊन आले आणि वाचायला लागले .
एकूण १५ लेखांचा संग्रह .
१-१ लेख वाचता वाचता लक्षात आलं कि हे पु.ल. तर वेगळे वाटतायंत
काही अपवादात्मक सोडून बहुतांशी त्यांची मी वाचलेली पुस्तकं हि विनोदी  धाटाची , पण हे लेख एकदम वेगळ्या शैलीत लिहिलेत .

'गणगोत'  सारखच ह्यातही व्यक्ती -चित्रण आहेत. पण ह्या १५ लेखांमध्ये रेखाटलेल्या व्यक्तिरेखा ह्या वेगवेगळ्या क्षेत्रातल्या मान्यवर महोदयांच्या आहेत . सर्व लेख हे साधारण १९६० ते १९७४ ह्या काळात लिहिलेले आहेत .

काही नाव सोडून, जसे 'बाबा आमटे ', रा.ग. गडकरी , बाकीच्या व्यक्तींबद्दल फक्त नावच ऐकलं होत .
जसजसं वाचत गेले तसतसं जाणवलं ते पुलंची ह्या सर्वांवरची भक्ती , निःस्वार्थ प्रेम आणि आपुलकी . त्यांची बारीक अवलोकन शक्ती  आणि उपजत रसिकता .

प्रत्येक लेखात वाक्यागणिक नवे नवे पैलू उलगडत गेले , आणि जणू काही एक एक चित्र  समोर रेखाटलं जातंय असं वाटलं .

एक एक व्यक्तीचित्र उलगडत गेलं आणि मनात  आलं  की कित्येक गोष्टी आवर्जून अनुभवायला पाहिजेत .

केशवराव दाते , भास्करबुवा बखले, मल्लिकार्जुन मन्सूर, पंडीत वसंतराव  , कुमार ह्यांची गायकी कधी ऐकलीच नाही आपण ह्याची खंत वाटू लागली.  गडकऱ्यांचं राजसंन्यास , भावबंधन आणि बा.भ.बोरकर नव्याने  वाचावेसे वाटलं .

माझ्यासाठी तर पुलं च ग्रेट , पण पुलं ना  जे GREAT वाटतात त्या व्यक्ती कश्या होत्या हे नक्कीच वाचनीय आहे

ज्या विनम्र आणि आदर पूर्वक शैलीत हे लेख लिहिलेत ते वाचून पुलंबद्दलचा आदर अजूनच दुणावला  आणि पुलंच्या लिखाणाचा हा एक वेगळाच पैलू वाचायला मिळाला .

कधी हाती आलं हे पुस्तक तर अगदी आवर्जून वाचाव अस आहे .

Hot cuppaa coffee

Today read an article on coffee from Vir Sanghvi in Sunday Brunch. and it triggered me to remember coffee evolution in my generation till now.
The childhood coffee memories are all around dear Nescafe. We did not know any other coffee back then.
Only other variety seen was 'Bru' instant coffee may be, but still it was only instant coffee around.
But having that also used to be an occasion.
In most of the households, coffee was stored only for guests who would not drink tea.
I use to get my share of coffee mostly during holidays, where there will not be any Horlicks or Complan to add in milk and tea was certainly forbidden for children.
My mother's friend, Indu Aunty, would be always carrying a bottle of Nescafe with her on holidays and we used to be morning coffee partners.
Days moved and then came the knowledge of other coffees.
It was still limited to know that there is something called as filter coffee which is available in most of south indian hotels.
I remember having filter coffee in 'Mani's' which is next to Ruia college in Matunga, sitting outside on plastic stools and sharing one cup between both of us.
The coffee would be served not in cup or glass mug, but a unique combination of stainless steel bowl inverted in another wider bowl.
The encounter with cold coffee was in a small outlet outside Somaiyya engineering college, where they used to server only 2 dishes, hot maggie noodles and cold coffee. what a combination!
we have shared many cups of cold coffee there.
Then sometime during later years of engineering, coffee chains started appearing in Mumbai.
The first glimpse of it was 'Barista' opened in front of National college.
At that time, it was totally out of reach for our college student pockets.
We used to feel amazed at how can a cup of coffee can cost a month of pocket money.
But the ambiance and uniqueness of Barista (serving only coffee) was certainly appealing.
Me and my ittle sissy thrust first time into it quite later.
Honestly, It was utterly confusing on what to order.
The hot coffee itself had several options like expresso, latte, cappuccino, all names sounding truly alien then.
Even the choice of cold coffee was not so easy. After reading short description below each, we managed to order some variant.
It was an experience to have tall glass of cold coffee, with hint of chocolate and topped with dollop of ice-cream.
I experienced the true coffee only when i was outside India.
The Paris university campus had many options. For the first time I saw capsule based coffee machine. Again it was confusing which capsule to be used, with caffeine or decaffeinated.
Looking at by bewilderment, one french colleague helped me and simplified the usage for me - saying 'if you want to sleep in the class, drink decaf and if you wanna stay awake during lecture, have caffein'.
The open coffee counter in the premise used to serve brewed coffee as well. Most of the Europeans colleague would prefer brewed version versus capsule based.
The coffee counter would serve a small dark chocolate along with cup of coffee.
Once on Sunday, my dutch colleague Gemma said let's hit Chantilly market for hot cup of coffee. That actually brought knot in my stomach, because I knew most of the dutch colleagues preferred black coffee without sugar n without creamer.
I told her, 'Gemma, please let's go to a place where I will get some whitening agent, either milk or cream to lighten my coffee. I cant have black and bitter drink otherwise'. She laughed out looking at my apprehension.
In London, the famous Starbucks was around each corner.
There was one below Citibank office in canary wharf and on many evenings, we will grab 1 large cup to share and sit on open stairs watching hussle bussle of business district in front.
During the Dubai work period, a pakistani office boy in client office used to make amazing coffee in a small pantry. I used to wonder what makes his coffee so different.
Then I found the secret ingredients, they were Nestle's coffee-mate and use of condensed milk like milkmaid instead of dairy whitener.
Also tasted coffee with camel milk in Dubai souk. Honestly, it was only due to coffee beans , I could finish that drink.
I saw some places selling Arabic coffee beans, but did not try it.
Now a days, almost every corporate office has coffee beans based machine, so the drink has become integral part of the work culture.
But honestly, a cup of Nescafe made by my son on a Sunday afternoon tastes best in the world to me.
